
Din Tai Fung has awesome Chinese dumplings, had lunch with a comrade who is flying off to the States the very same day. No more yummy good quality Chinese food at the states so this was his last chance eating decent Chinese food! And guess who decided to tag along for lunch?
Din Tai Fung specialises in making awesome Chinese Dumplings and despite being Chinese and living in a very Chinese orientated Singapore environment, I don’t usually enjoy these type of delicacies.
We had a ‘light meal’ with 2 sets of dumplings and a pork chop fried rice. It was awesome. I love lamb chops and chicken chops and actually rarely eat pork chops, but this plate of pork chop fried rice was just so good!
The 2 sets of dumplings we had were crab and chili crab dumplings. For those uninitiated, dumplings are these little things when pieces of fillings inside them warped with a thin layer of dough skin and steamed. As a result from the steaming, the dough skin is semi-transparent and the essence of the meat would be sealed inside, and the dumplings would have a certain type of juiciness inside which is indescribable, you’d have to try it yourself to know the feeling!
Dumpling making is actually not an easy process. The dumplings are handmade and the folds you see at the tip of the dumplings are not easy to make. In addition, the chef has to make sure that the hole at the dumplings are not too big or not too small or the essence of the fillings would be gone or the dumplings would just explode while it is being steamed. The steaming is done on wooden what-ever-you-call-them-plates such as these and Din Tai Fung and most dumpling outlets serve their dumplings on them right out of the steamer. It’s hot!

If I'm not wrong, the meat bits & soupy sauce in the Xiao Long Bao is usually frozen first before steaming... hence the flood of juices that gush out when biting into the dumpling.
Personally, I prefer Cantonese style Dim sum. SIEW MAI~!! It's so dang hard to find good Siew Mai. =/]]>

< ![CDATA[Mmm... xiao long bao is so yummy. I usually just get the normal type instead of crab because of price. Ding Tai Fung is expensive, but it's good stuff. I'm a fan of the beef pastry-like things, not sure what they're called in English. I like pork chops too, but I'd rather have it with Shanghai noodles than rice.

< ![CDATA[I had something that was close to what you described as a true dumpling only once. The dough was thin, but the dumpling was also spicy and dressed with sesame sauce and scallions. It was the best dumpling I ever had. The ones I'm used to eating have a thicker kind of dough around them, but they're still good.

There are lots of Chinese restaurants here in the Philippines, but I think one difference of dim sum here in the Phils is that people usually eat them with soy sauce. I forgot what authentic Chinese dimsum tastes like because the last time I did was several years ago @@;]]>
